The menu is found on page 230 of the September 2004 Cooking Light and includes the title recipe along with a recipe for Coconut-Almond Couscous, which was fantastic. The recipe for the Greek couscous can be found in the Complete Cooking Light Cookbook on page 259. I did not use red onion, used zucchini in place of cucumber and doubled the couscous amount.
